Re: Show off your rum collection

Thanks for sharing the information and photos Tiare!! If you are interested in tasting the Tanduay Philippines rums, perhaps I can send you a sample one day. I am looking forward to getting some more rums, this month, with the english pound's currency rate so low, I went and spent so much money on w...

Re: Tanduay 18 and Tanduay Centennial tasted

Happy to see your review here, Count! I have enjoyed both of these rums very much myself. The 18-year old rum or rhum as they write it in the Philippines is only available in a wooden barrel (inside of the barrel is metal) of 1.5 litres or 3 litres sizes. I have personally only seen the 1.5 litre ve...

Re: Chill (and other) filtration in rum manufacturing

I am not sure I quite understand why charcoal filtering in his opinion would be cheating since its not like anything is being added, such as flavourings, to improve the spirit. Did he explain why? Well, it is not a matter of perhaps adding anything to the rum -- but rather taking away from it. Same...

I am looking at two particular bottlings from Cadenhead and wondering if anyone in UK or Germany (or elsewhere) has any experience with these? Top sipping rums tasted

Which rums have you really enjoyed? And I do mean as themselves, not in a cocktail. I would be curious to hear other opinions. Doesn't matter if the rum is an obtainable one or not, rare or not. I can start listing here some of my current & past favorites, not in any particular order (because the or...

However, this aside is still valid in that Guyana and Suriname - both listed as ACR (authentic Caribbean rums) brands - are not in the Caribbean sea, but rather border the south Atlantic. This is absolutely true if one looks at the map, no doubt about it whatsoever. The area called "Caribbean" is v...

At least at their website they are careful not to mention anything about any additives, as far as I can see, but I noted a similar discussion thread in the Ministry website. When I last checked, there were no definite answers given by anyone there, and the discussion was winding down despite of that...

It is true what you said, and it would be very interesting if some chemistry-skilled people would inspect rums for the same chemical compounds found responsible for the rancio notes in cognac or whisky. Who knows, maybe due to process they develop similar and sooner in rum?

"Molasses" is much more defined, and is widely accepted to mean the mother liquor after sucrose/sugar crystals have been removed. Thus, "molasses" always is one of the byproducts of sugar production and removal. Yes, but the process starts remarkably similar way as already noted. I wonder if you ac...

Re: 15yo Pussers rum review

English language is a wonderful thing!! I know some websites use the word "pungency" when talking of rancio. The truly pungent, powerful flavour found in most Jamaican rums (especially younger ones) is nowhere near what I'd call rancio notes, that's for sure. However even old Tawny port wines (30 yo...

Re: Rum review: Ron Zacapa Centenario 23

The process of obtained the semi-syrup/cane syrup/cane honey is pretty simple. Remove water. BTW, This is usually done by applying a vacumn (vacumn boiling), not heat. Now let's consider "first boil" molasses, aka "first strike" molasses, "A Molasses" or "food grade" molasses. Much, much more invol...

I think the ultimate solution of this problem is to drink the rums faster, fast enough not to let the air take any effect!

Influence of air (oxygen) on rums

I have been contemplating quite a bit recently on the influence of oxygen or air exposure to rums in opened bottles. I know many of my fellow whisky enthusiasts actually find that whiskies improve after opening the bottle and allowing them to breathe; well, I must say that in many cases I do not per...

J... This is a superb analysis and I'm learning something from you. You have made the point that what is being called "first boil" (or food grade molasses) may be closer to "sugar cane honey" than I first believed. I agree with you that the term "sugar cane honey" seems to lack a precise definition...

Re: WIRSPA: Unplugged

I agree with capn, this is to a degree an attempt of lifting the CARIBBEAN rums above other rums, and in this aspect this is not a very nice or delightful move. Implying that only Caribbean rum is somehow "authentic" rum is a lot of nonsense. In Philippines for instance rum has been made for more th...

Hello capn, after reading your response I am a little puzzled: I think you did not read all of the post above, or missed out on some of the details there. Interesting post, but there is a huge difference between even "first boil" molasses and any cane juice syrup. I will try to keep this short: Cons...

Cane Honey vs. 1st boil Molasses

I was interested enough in this topic of any potential differences between "cane honey" and my own understanding of what so-called light, 1st boil molasses is to do some further digging on the matter. One thing to mention here is that as I understand, those rum manufacturers who make rum outa molass...

Thank you for this explanation - I must admit, I am still a little unclear on the difference of the matter when we speak of the very 1st stage of making molasses, and the making of sugar cane syrup - because both start with boiling / evaporating the sugar cane juice. As far as I know (and I might be...

From MoR: Well, my friends, according to the bottle, which was purchased in 1986, this is the Solera 23. And of course, it is the full weave covered bottle. Another interesting note: no cork. It was a plastic twist off cap. So, in order to be fair, I had to taste it next to a current bottle of Zaca...
