Crystal decanters can be hazardous
From On Food And Cooking , ISBN 0-684-80001-2 High-alcohol spirits are biologically and chemically stable and can be kept for years without spoiling. One traditional and decorative way of storing them has been the decanter made of glass crystal, which derives its weight and appearance from the eleme...

Re: Use of pesticides in Cane fields - safe rhum?
I am also concerned by Ethyl carbamate (also called urethane), a cancerous chemical found in beverages made by a fermentation process and then heated. Barbancourt has been banned for an indefinite time in at least one Canadian province (Quebec) because of suspiciously high levels of that molecule. E...

"Nice legs"
Many reviewers make sure of describing the formation of "legs" and speak positively of this phenomenon. They rejoice when they witness it. The glass gets its required swirling and a nice sturdy rim appears and quickly gives rise to very strong, nice looking legs. ... Swirled about the glass and then...

El Dorado 12 vs El Dorado 15
How does the El Dorado Superior Demerara 12 year old rum compare to the excellent El Dorado Special Reserve 15 year old rum ? Dark brown rum distilled from molasses. Aged 12 years in used whisky and bourbon barrels. Reformulated in 2006, El Dorado 12 is now much closer in flavor and texture to the f...

Re: Reinventing the wheel (of flavours)
Many questions, so, if you have any element of answer, please join the discussion. There has been some very interesting research done, but much of it comes from exhaustive studies of descriptors and frequency of usage. From my uneducated point of view, this is a very good starting point. To be vali...

Re: A comparison of various tasting glasses
Yes, neither the Optimol nor the Reko are available, discontinued. I hope some day, the Optimol glass which Capn Jimbo strongly recommends will be available again so we all can enjoy the reviews with the same reference glasses. Thank you, Count Sylvio and Captn Jimbo, for your reviews of The Flare....

Re: A comparison of various tasting glasses
I searched the new 2009 IKEA catalogue and the Optimol dessert wine glass is not in it. Maybe, they stopped making it.

Reinventing the wheel (of flavours)
I stumbled upon this interesting article about flavour wheels . To fulfil the lack of descriptive clarity, people have started inventing "flavor wheels", in analogy to color and pitch wheels. It isn't a great analogy, because color and pitch both form repeating cycles, for underlying physical reason...

Re: Review: Plantation Rum Barbados Grande Reserve
My mother prepares one dish only on special occasions. The recipe for chicon au gratin (braised Belgian endive, rolled in ham, grilled in a Gruyère cheese sauce) is very simple. It's not special in itself. It doesn't require special skills. Even if the ingredients must be carefully chosen and of the...

It's impossible to grasp the Appellation d'origine contrôlée (AOC) system without first fully understand the concept of terroir , the French belief that the land imparts a unique quality, not reproducible elsewhere. A mix between (esoteric) chauvinism and marketing opportunism. You must also know th...

Re: Ron Zacapa 23 as a benchmark
Good evening gentlemen, I'm glad to have discovered this forum. The discussions are very interesting. (You'll have to forgive my awkward writing style. My mother tongue is not English, but French.) Upon studying BTI's scoring I was reassured to find that we have a fairly typical bell curve. This is ...
