I love sweet rums. If you enjoy it, it's great rum and the Diplomatico is loved throughout the UK.

I understand the common method is to steam open a cigar and place it into the bottle. It won't need long though - depending on a wide range of factors, not more than a fortnight. Keep checking it every day

If you can make sure it sets in a nice shape, you should have to do anything with it. But shaving it into a perfect sphere is the super professional thing to do...

Extra Old doesn't exist anymore I'm afraid. The 10 year old is effectively replacing it - although at £60-70 a bottle it's hardly a like for like replacement

Keep it simple Count, just take it out the freezer and let it thaw on the side. The thawing process forces the small oxygen bubbles out the liquid making more compact ice. Try filling a balloon with water and thawing, refreezing it a few times. Makes great ice!

I just texted Rich and he says he made you loads of different old-fashioneds. Standard OF recipes but with different bitters in them - E8 with cedar bitters, El Dorado with tobacco and leather bitters, HC7 with some bitters and he made one with a Silver Seal rum - he can't remember which!

Rum is both a preoccupation and an occupation for my IPB chums..... Count - I'll send you a huge batch of rum production notes covering the 15 ACR producers shortly. The Caribbean are dragging their heels getting it signed off, but when they do, I believe Refined Vices should be the forum to host it.

At the turn of the last century Naval rums contained a small measure of every rum producing nation in the Empire. Including, supposedly, an appalling South African rum that they had to use in the tiniest measures to avoid spoiling the blend.

I'm fascinated by this story - would it work? I know when we were in Jamaica we were discussing alternative ageing techniques with the production team including stainless steel vats but with the wood inside so there was still the interaction - supposedly this does not work...
