J... This is a superb analysis and I'm learning something from you. You have made the point that what is being called "first boil" (or food grade molasses) may be closer to "sugar cane honey" than I first believed. I agree with you that the term "sugar cane honey" seems to lack a precise definition....

Wonderful, thank you. Bouchard states that the 1824 is double charcoal filtered "to make it more palatable". I wonder in what way - what characteristics do they intend to remove with charcoal? Any idea J?

This is a fascinating question. The whole idea of filtering seems more oriented toward marketing - clear appearance, or perhaps to correct a distillation. I am not aware that this is all that common in rum making, but I really don't know - does anyone? Here's an interesting thread on chill filtratio...
