Re: Influence of air (oxygen) on rums
My experience here is really pretty limited, but I have lately noted a couple of aggressive younger rums (example Jack Tar) benefit markedly from a good airing in the glass especially at first opening of the bottle. Once the bottle has some air space these same rums do smooth out and become more acc...

"The rain in Spain falls mainly on the... by George, I think I've got it!" Way back when, I spent a tremendous amount of time on this subject, only to be once again confused, so as to spend yet another big chunk of time. J, I think I've finally come to understand what's happening here, and it is a ...

Re: Rum review: Ron Zacapa Centenario 23
J... This is a superb analysis and I'm learning something from you. You have made the point that what is being called "first boil" (or food grade molasses) may be closer to "sugar cane honey" than I first believed. I agree with you that the term "sugar cane honey" seems to lack a precise definition....

Are you a fan of Caribbean rum? Most people are. A recent survey found that eighty-five per cent of UK respondents stated they would be “more interested” in “trying rum from the Caribbean compared to rum from other parts of the world”, with 38 per cent saying they would be “a lot more interested”. I...

Re: Rum review: Ron Zacapa Centenario 23
Interesting post, but there is a huge difference between even "first boil" molasses and any cane juice syrup. I will try to keep this short: Consider the following and it should become abundantly obvious to all that there is a huge difference in "fresh juice" (whether concentrated or not) and molass...

Re: Rum review: Ron Zacapa Centenario 23
Hmm, to my unrefined ears this sounds an awful lot like the so-called sugar cane "honey" is a well-prettified word for - 1st boil molasses. Of course its much more marketable today to say we use "purest of sugar cane honey" instead of 1st boil molasses, but -- ? I too wondered about this. As it tur...

Count, thanks for your review. I'd recollected that Reserva Exclusiva was just as you reported - one of the liqueur types - and accordingly I won't be buying it anytime soon, as the Twiggie category is quite full enough already, thank you. But this review raises another question. It's my hypothesis ...

Wonderful, thank you. Bouchard states that the 1824 is double charcoal filtered "to make it more palatable". I wonder in what way - what characteristics do they intend to remove with charcoal? Any idea J?

Re: Chill (and other) filtration in rum manufacturing
I'm with you Count. At least I think so, though I wonder what Richard Seale would say. Perhaps I'll ask him. Seems to me that filtration is subtractive. All spirits go through some filtration at some stage, actually at several stages. In the case of rum, the crushed cane is filtered to remove bagass...

Re: Chill (and other) filtration in rum manufacturing
This is a fascinating question. The whole idea of filtering seems more oriented toward marketing - clear appearance, or perhaps to correct a distillation. I am not aware that this is all that common in rum making, but I really don't know - does anyone? Here's an interesting thread on chill filtratio...

Interesting link, Count. Obsession, obsession! When I am faced with a new subject or interesting questions, I find it hard to let things lie and usually find myself researching once again. Re: Cling film solution to keep the angel's share down
My first impression - and please correct me if I'm wrong - is that barrel exposure to the air (read that again) is a two-way street, with alcohol being lost (the Angel's share) while oxygen/air passes in! Keep in mind that one of the most important factors in barrel/oak aging is oxidation of alcohol...

Points well taken friends. Interesting points of view. It is certainly true that alcohol - particularly in excess - can lead to erosion and cancers of the oral-esophogeal route. Re: Tobacco infused rum
The reason I asked is that I work as a hospice RN and see the sad outcomes of tobacco. Most people understand that smoking tobacco does indeed carry a high risk of lung cancer especially. What is not so well known is that so-called "smokeless" tobacco is of equal or higher risk for oral and esophoge...

Thank you for a great review! Thought you might enjoy Sue Sea's notes... At first I picked up a light alcohol prickle - not in a bad way. This rum is quite complex and requires airing. An interesting article indeed. Throughout their history both in and outside of Cuba, the Bacardi empire has been consistent only in pursuing domination in the rum business.
