Re: Toward an Authentic Rum Profile
Count, thanks for the contribution. Naming the pure and unaltered rums is a great idea, as then we know the source of the characteristics noted. I've long been after Seales' cane juice rum without success; it's simply not available in south Florida. I've known Richard Seale for a few years and can s...

Re: Favo(u)rite Whisk(e)y?
Time has passed and I'd make the following additions: Cragganmore 12 Year: floral and light, even Sue Sue (who hates whisky) loves this one. Bowmore 12 Year: a modest Islay peat with fruity overtones, nice, much improved over the Legend. Speaking of blends, I've discovered some terrific options: The...

Toward an Authentic Rum Profile
With the goal of encouraging posting - and to explore an authentic profile - I'd ask the following: With regard to rums that you consider pure and authentic (no hidden flavorings, sugars, sherry, or additives) what are the aromas, flavors, finish and aftertaste that you associate with: 1. young rums...

Re: Sancho Panza Double Maduro Lancero Review
The Sancho Panza Cabellero is widely respected, and pretty well rated for a $5 smoke. I like them, and so do the many folks with whom I've shared them. Personally, I've found the notion that Maduro wrappers are bitter or somehow strong, to be untrue for us. The smokes we liked the most though, have ...

Yes, I would continue to say that rain water can reduce ferment times and or get the ferment closer to a lower FG. I assume rain water is really really well aerated too. Very helpful before the yeasty beasties go anerobic. Actually the rainwater harvesting systems used commercially take steps to mi...

"IMHO, the rancino notes within the younger rums are due to the addition of the aged dunder..... Or more specifically the dunder that has been infected/cultivated with Saccharobutyricum." "Marketing indeed, as everything seems to come down to marketing and perception these days. Often, distilleries rely old world methods to insure that the flavor profiles that their customers have grown accustomed to do not change (think New Coke)." Let's not think New Coke, ugh. I'd agree that alth...

Re: Favo(u)rite Whisk(e)y?
After reviewing over 120 rums at The Rum Project, Sue Sea and I came to the unfortunate conclusion that truly and unadulterated rums are few and far between. Still, the ones that are pure are magnificent, and among these we'd have to include Doorly's XO, MGXO, Seales Ten Year, Barbancourt, Pussers B...

Look forward to what you find out Count, but really, isn't this much ado about very little? So called "rainwater harvesting" is not really new and is done by a number of wineries already. It is well to reflect on the fact that rainwater is close to the purest water available with no real minerals or...

If someone cannot describe to me the mechanism at play that allegedly causes some portion of the population to be more attuned to tasting than to the rest of us then I am going to have to cast serious doubt on the so-called science of this claim. Indeed, taste is affected by so many environmental v...

I agree completely. To those so affected the sensation of "bitterness" is quite real, and it is perfectly honest and understandable if they note or report it. The studies are not cast in stone, and it is well to note that the "25%" who exhibit this sensitivity was "... to a greater or lesser degree"...

Re: Whisky review: Whisky review: Bruichladdich The Sixteens
Let me be more specific. One of the phenols that may result from either fermentation or distillation is phenol-thiol-urea (yes, I know). A number of studies have shown that in most populations about 25% of the tasters interpret this phenol as "bitter" to a greater or lesser degree. The vast majority...

I won't pretend to know about alteration of whisk(e)ys, but I can speak to rum. The evidence is overwhelming that rogue rum is frequently "tweaked" with sugar, sherry, glycerol, artificial flavors and spices and the like. Sugar and baking (not spirit) caramel is frequently used as sugar can make a y...

This sounds like branding to me. I am uncertain where the problem lays? Coke brands. Pepsi brands. Oreos brands. Burgundy, Chianti, Parmesan cheese and Bourbon all brand. Why can't Rum define its brand as well? What is the difference between Champagne and the exact product made in California or Sou...

Re: Traveller's 1 Barrel (Belize)
Honestly, 1 Barrel is a very difficult rum to place. It's really way too young to be considered a sipper, and as a flavored rum I perceived it as way too single-minded (artificial maple syrup) and overpowering. I suppose it might make a mixer, assuming you are in love with faux maple.

I found several references to the adding of "Belizean juices and flavorings" to this rum. My sources included direct quotes from the distiller, the importer and a very long article in a local Belizian newspaper who interviewed and quoted the distiller in what amounted to a homeboy does good kind of ...

Good stuff. In the Texas case, the company went to great expense to trademark "Basmati", which would have denied any other country or entity from using the name! This is amazing, and fortunately, it lost! In the instant case, WIRSPA succeeded in capturing the generic terms of "Caribbean rum" insofar...

Excellent points J, and I am so thankful you have highlighted the sources and conditions of rum production in the Carib.
