I must contradict an idea presented in an earlier post. The concept is that a 25 yr old whiskey sat on a shelf for 25 yrs. becomes a 50 yr. old. Unfortunately, once bottled, without interaction with wood and oxygen, spirits no longer are considered to mature and age. So it remains a 25 yr old.

Old Potrero is a superb rye! This is something new from the Anchor Steam Beer people in San Francisco. For bourbon, Buffalo Creek is great but may be too richly flavored for this recipe. I would look at Berheim Wheat Whiskey or Forty Creek Canadian for the subtleties that would do well in this cockt...

In many ways it was Green Island that helped begin my fascination with fine rums. I spent 6 months in Mauritius in 2000 diving on shipwrecks, but on bad weather days I got to visit and then to know the various distillers.

Lately I been exploring armagnacs. Tonight the snifter is filled with a delightful spirit, Larressingle VSOP from Gascony. This has wonderful floral notes upon first touching the tongue and a delicious deep woodsy linger.

Of the rich Islay whiskies I prefer the Lagavulin to the Laphroaig. The phenols are a bit more balanced. Octomore is scheduled to have double the phenols of even these.
