Dear Count. Do not be too quick to dismiss your own perceptions. One man's "candy" is another man's "floral". The object of tasting is not to find what others did, rather to find what the rum speaks to you. Can you describe "floral" further? Was it a green leafy smell? or a flowery aroma like a rose...

given that I tend to decant my wine and spirits into a different container than they originally came in; the concept of corked, stoppered or capped isn't a real concern for me. I think that to most, the idea that a cork slightly flavors the wine different is simply silly, since the cork, after expo...

Re: Brandy Recommendations?
I love most things about cognac - except its price. I have no qualms about drinking armagnac just because it's not cognac. Simply put, I appreciate a good brandy. I would say that smoothness is my primary concern closely followed by complexity. And I prefer sweet to dry. An ultra smooth but boring ...

We can certainly help with the cognac discussions. It's another passion of ours.... Dear Sir. Your participation is most welcome. May I suggest you repost the above in the "Brandy forum" to gain some response. On the side, What marque of vehicle is Mr Steed driving nowadays? And whatever became of ...

Dear Count. What a find! I wonder where you found this post? I would love a link to it. Back in the early '80's when I was still teething on spirits whilst living in the Colony, I came a cross a stockist named Daryll Corti, of Corti Bros. in Sacramento, California. He remains a brilliant taster and ...

To give more range I've considered: Bronze, Silver, Gold and Platinum awards. Platinum given only to the most exquisite of rums. Although I'm not sure if I should have one more lower category as some products don't deserve even bronze. if it is poor, why not just have a "No Reward Given" instead of...

I'd just like to say that I've been thoroughly enjoying this thread as I've slowly worked through it during the work-day (been a busy day today). Lots of great information and ideas here. My wife and I are actually in the very early stages of trying to set up a rum tasting evening with some friends...

Scottes and Count. Both of you have ample experience and very good palates. The keys to quality assessment are consistency and discipline. And both of you display those keys. Scottes...I liked it in your "blinfold" blog when you commented "This shit ain't easy!" Exactly! Blind tasting forces one to ...

Dear Count. I have re-read your rum reviews and find them very enjoyable. If I were to want for anything more it would be to see a bit more attention paid to the appearance of the spirit in the glass and then to a more detailed conclusion on the overall quality assessment. Otherwise a fine job. You ...

Scottes. As far as tasting classes or groups, I'm long out of the loop on what's going on in your neck of the woods. I'd check with the better wine/spirit shops. They usually know of tasting groups in and out of the trade. If you have the means you may want to start your own tasting group with a few...

Scottes. I'm glad to hear that my outline has given some food for thought. The concept of "blind" tasting is important to a critical assessment in my opinion. It's also important in the learning process. It helps to train the senses and memory. I understand that it may not be usable in the body of y...

Re: Rating system
Help me create a rating system for my rum/whiskey reviews. I care about the bottle but it is not significant. I care about the aroma but it is not as important as the flavor which matters most. The aftertaste is perhaps a little more important than the aroma. I also take smoothness into considerati...

It is, in a way, since its based on the Bombo - just with modern ingredients. "If I was going to raise a glass to America, it would contain grog or a rum flip or the mixture of rum, water, molasses and nutmeg that buccaneers used to call a bombo." The bombo doesn't sound too exciting. Dildo's Bumbo...

Dear Lady Emenegildo. A wonderful post on a long lost concoction. I too, came across a recipe favoured by the American colony.. It's called a "Shrub". I think this may have come from the Motherland or possibly up from a colony in the Caribbean. It consists of macerating fresh whole berries in vinege...

Re: A good cigar on a budget
Anybody can walk to the cigar store and pick out the most costly cigar and no doubt enjoy it, but what are your suggestions for reasonably priced good cigars? Something from Honduras is always a good bet and Cuesta Rey Centenario (Dominican) are OK value for the quality. Good day Lord Sterling. The...

I took the liberty of fixing the formatting in your most recent correspondence as I could not find your words amidst mine. Dear sir. I am encouraged by your obvious taste in cigars. However, I think you may have missed my point in the Port selection. Ruby is a style. Graham, Dow, Niepoort, Taylor Fladgate are producers. Vintage is distinct from ruby or tawny or late bottled vintage. Ruby Port is fine with a farmhouse c...
